On a recent road trip I discovered that Mexicans like to add a little spice and salt, and a squeeze of citrus to their fruit – delicioso!
I finely chop pineapples, mangoes and local apples, when in season. I then marinade the fruit in a zingy blend of citrus juice and spices before lightly salting and air-drying it overnight. The result is a game changing fruit snack with the perfect blend of sweet and sour, and a touch of heat.
